A Leftover Day

I didn't do a lot of cooking today.
However, I'm getting to the point where I can just 'throw' things together and still get a delicious lunch!



Like this Bacon-Lettuce-Tomato-Cheese sandwich, made with Smart Bacon and Almond Cheese.
It was actually really delicious, and I think the makers of Smart Bacon really have it down! Also, tomatoes are one of my favorite vegetables. Or fruits, or whatever kind of edible delight they may be!

Other than that sandwich, I had leftover pizza, leftover carrot soup, and the last cinnamon roll!

I also wanted to try something other than running, so today I did Jillian Michael's 30 day shred. I don't think I will do it for 30 straight days, but I would like to do it more often. It was really intense, and even though at the end I was begging for it to stop, I think that is just what my body needs: intensity.

On another fitness-related topic, I have an exercise buddy! :D
My co-worker and personal food-taster Danielle has agreed to do laps at the community college track with me. We're going to be starting next week! I'm real excited :)

----Yesterday----

Yesterday I made Cream of Tomato and Basil Soup and Maple Flax Brownies! Both from La Dolce Vegan by Sarah Kramer. I was incredibly impressed by the Tomato soup. I thought it was absolutely DELICIOUS. It was rich and smooth and creamy and took almost no time to make. I didn't really see a downside to this dish, so I give it 5 out of 5 stars :)




The brownies, however, I thought were a little iffy. The texture was alright, and the taste was alright, too. But it was just alright. The brownies weren't really sweet and flavorful like I was expecting them to be, but Danielle at work loved them so I'm gifting the rest to her :)
Brownies: 3 out of 5 stars.







I also purchased Vegan Vengeance from Amazon, so I'll be 'testing' recipes from that cook book once it arrives in the mail. Stay tuned!

Also, I feel that it gives readers something to respond to if I answer with a post-related question:

I have made two different vegan brownie recipes so far, and I have found that they just don't quite cut it. Have you found a recipe that really works for you or do you have the same problem as me??

  2. You know, I was deciding between Vegan Vengeance and Veganomicon when I was shopping!

    I had read reviews that said a lot of the recipes used 'weird' ingredients or hard to find ingredients so I was kind of put off by that, but if its one of your absolute faves maybe I'll pick it up next time I'm shopping :)
