The Super Tortilla

To start things off,

Last night I delved into another recipe from La Dolce Vegan, called Wendy’s Lentil and Brown Rice Casserole. There is a cute little clock next to this recipe because the casserole takes an hour and a half to cook. BUT! It also takes literally 5 minutes (if that) to put together before you put it in the oven.
This is what it looked like before:

It looked a lot like tomato soup with seasonings and onions swimming in it. But after an hour and a half, the rice and lentils soaked up all the liquid and it turned into a tasty rice casserole:

This reminded me of “Santa Fe Style Rice and Bean” T.V. dinners I used to eat (before I learned how to cook).  I liked it! If you have plenty of time before dinner, but not any time to actually tend to your cooking, just throw this in the oven and stir it every so often and you’ve got a meal.
I also got “what are you cooking, it smells so good!” from nearly all the meat-eaters in my house. I’d call that a success!
I would give this recipe a 4 out of 5 stars. It had a nice flavor, easy prep, and can be eaten alone, in tortillas, and probably with a hundred other things I haven’t even though of!
And today I stumbled across these:

These babies have a whopping 80% daily dose of iron.
When I saw that I was like O.O WUT?
Turns out the flour was fortified with iron. But, iron or not, my rice/lentil casserole wrapped up in one of these with some salsa and tomatoes made a delicious lunch!

    I am trying to think if I've found anything I've been pleasantly surprised by lately... I don't think I have! I am sure it's happened before though :)

  2. I will have to look for these wraps near me. I love wraps. You can stuff anything in them and be set! :) While it doesn't have a nutrition label, I remember being pretty surprised when learning how great avocados are for ya.

  3. I wish I could tell you what store they were purchased at, but alas I was not with my stepmother when she bought them!

    But if I had to guess, I would say they were found at Winco or another huge discount grocery like that.
